Publican Oisín Rogers met restaurateur Charlie Carroll for the first time in 2013 and the pair soon got round to chatting about what it might be like to open a pub, using Rogers' decades of experience running some of London's finest boozers, with a restaurant/chophouse guided by Carroll's expertise in meat and restaurateuring. Carroll and Rogers have now lovingly restored the site of The Devonshire just off Piccadilly Circus back to what it had originally been for more than 200 years: a pub.
The pair have joined forces with chef Ashley Palmer-Watts of The Fat Duck and Dinner by Heston fame. Palmer-Watts joined the business as a Co Founder, spending over a year developing the menu which celebrates British pub classics along with new favourites, all overseen by Head Chef Jamie Guy, who was right hand man to Mark Hix for many years.
