Parrilla by Baste
Parrilla, the successful Argentininan-inspired popup from Baste, which ran in Lock 6 Café in September & October 2021, is popping back up at Big Grill 2023.
Inspired by a trip to Buenos Aires Andy Noonan and John Relihan took after they cooked at Churrascada International Barbecue Festival in Brazil. They headed to Buenos Aires, where they met chef and asador Rama Basilio he invited them for an Asado (Argentinian barbecue) at his social club. They were smitten with the style of barbecue and the communal attitude to eating and drinking in Argentina.
Parrilla is their homage to Asado and they are delighted that Rama, now a resident in Dublin and rising star Mecha Solis are taking the reigns to create a little piece of Buenos Aires in Herbert Park.
Recreating one of the many hole-in-the-wall Parrillas in Buenos Aires, grab a seat at the counter and enjoy a choripan or an empanada with a glass of malbec or vermouth & soda.
