Phill’s love of food started at an early age and led to him leaving school at sixteen to begin his career training under Simon Radley at The Chester Grosvenor Hotel.

After extensive travel around the world working in many countries including France, Austria and New Zealand he decided to make the move to London where he has spent the best part of a decade working for Hawksmoor, helping open restaurants in london, Liverpool, New York and most recently Dublin who are a festival highlight that sell out every year.
