MANI is the brainchild of Ciaran McGonagle. It is a sort of passion project gone wrong over the last 4 years!! After studying the art of roman pizza in Rome and Madrid from 2 of the world's best pizza masters Ciaran opened his Pizza shop on Drury street in Dublin with head Chef Rory Shannon in December 2023. It has proven to be a great success and a popular choice for food on the go.

Love and passion along with Irish & Italian top quality ingredients bring our pizza to life! Our dough is made with the best flour, sea salt, extra virgin olive oil, a small amount of yeast and, of course, water... lots of water!
FLOUR, WATER AND TIME
In fact, it’s 80% water which makes for a highly hydrated dough. This, along with 72 hours of leavening at a controlled temperature, gives our pizza slices high digestibility, lightness and a crispy exterior.
