João is our Seafood chef at Michael’s and loves to cook over fire, and there’s nothing like the aroma of seafood over flames. 

“João came up the hard way, maybe it’s the right way, who knows, he started as a kitchen Porter just to make rent and progressed upwards through sheer hard work, making mistakes, owning up to them and determination to improve, and now he bosses the Mains section in Michael’s Mount Merrion with a real sense of quiet smouldering pride and no ego.

We’re planning to cook seafood and shellfish over a fire, but the seas will decide for us that day what we’ll exactly demo.

Ideally, a whole Irish Monkfish or Turbot over Wood with dressings and marinades with a butchery demo on lobster and some oysters that are merely licked by smoke to enhance the saline deliciousness, 

Oh, and we’ll be bringing in the beauty and the beast action and cooking fish heads basted in fine champagne, just cos.
